The
red crayfish is a traditional red shellfish found in the lakes and rivers that
is fished during the night and is rare and expensive these days. The
centerpiece of a Swedish meal during a gathering is a large tray full of
shellfish, cooked in saltwater and scented with anise. This whole feast is
complemented by rye bread and seasoned cheese with cumin. Red crayfish are very
popular in the markets and fish shops throughout the country during the late
summer.
