Churrasco originated in the southern region of Brazil in the
1800s. It's the traditional cuisine of the gauchos - South American cowboys.

churrasco-style of grilling brings out the authentic flavors of the meat. It's
the reason why Brazilian gauchos were motivated to find ways to roast the meat
without smoking it because the smoking process can remove the natural taste of
the meat.
The most common process of making churrasco is to slowly
roast skewers of meat over an open-flamed charcoal bed until the outer layers
form a well-crusted sear. When the outer layer is fully cooked, the Gauchos
happily serve the skewers to their family and friends.
